Mediterranean Chickpea Salad

Ingredients:

Salad Base:

4 cups mixed greens (romaine, spinach, arugula)
1 cup chopped cucumber
1/2 cup halved cherry tomatoes
1/4 cup thinly sliced red onion
1/4 cup Kalamata olives, pitted and halved
1/4 cup crumbled feta cheese

Chickpea Mixture:

1 can (15oz) chickpeas, rinsed and drained
1/4 cup chopped fresh parsley
1/4 cup chopped fresh mint
2 tablespoons extra-virgin olive oil
1 tablespoon lemon juice
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper

Dressing:

2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
1 teaspoon Dijon mustard
1/2 teaspoon honey (optional)
Pinch of salt and pepper

Instructions:

1. Prepare the Chickpea Mixture: In a medium bowl, combine the chickpeas, parsley, mint, olive oil, lemon juice, oregano, salt, and pepper. Toss to coat evenly.

2. Make the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, honey (if using), salt, and pepper.
