Instructions:

Prepare the cucumbers: Wash the cucumbers thoroughly and pat them dry. You can peel them if you prefer, but leaving the skin on adds a nice color and texture. Thinly slice the cucumbers, either using a mandoline or a sharp knife.

Prepare the onion: Thinly slice the red onion. If you find raw red onion to be too pungent, you can soak the slices in cold water for about 10 minutes, then drain and pat dry. This will mellow out the flavor.

Make the dressing: In a small bowl, whisk together the olive oil, white vinegar, dill, sugar, salt, and pepper. Adjust the seasoning to your liking.

Combine and chill: In a large bowl, combine the sliced cucumbers, red onion, and fresh dill. Pour the dressing over the salad and gently toss to coat everything evenly.

Serve and enjoy: Cover the salad and refrigerate for at least 30 minutes before serving. This will allow the flavors to meld and the cucumbers to soften slightly.

Ingredients:

2 large cucumbers

1/2 red onion

1/4 cup fresh dill, chopped

1/4 cup olive oil

2 tablespoons white vinegar

1 teaspoon sugar

1/2 teaspoon salt

1/4 teaspoon black pepper

Recipe Note: This recipe is easily customizable to your liking. Feel free to add other fresh herbs like parsley or mint. For a bit of heat, try adding a pinch of red pepper flakes to the dressing. You can also add other vegetables like thinly sliced bell peppers or cherry tomatoes.
